Bent'Up, IOC 15 kg, for flotation sodium bentonite
In addition, bentonites adsorb molecules with opposite charges thanks to their negative surface charge. this is particularly helpful for protein stabilisation. The higher the pH value of the wine, the more difficult it is to deproteinise the wine, meaning that large quantities of bentonites sometimes have to be used to achieve protein stability.
BENT'UP was chosen for its high deproteinisation power and excellent clarifying effect.
Used in flotation, BENT'UP makes it possible to reduce the degree of protein instability of wines very early, even before alcoholic fermentation, and thus maintain aromatic stability.
Dosage and application
Dissolve BENT'UP in cold water at 20 times its weight and leave to stand for 3 to 6 hours, stirring several times.
BENT'UP can also be dissolved in water at 50°C, thus reducing the waiting time for incorporation into the must to be treated and optimising rehydration.
The use of an electric stirrer is strongly recommended for preparation. Once you have a homogeneous preparation (without lumps), the suspension can be stirred into the must.
BENT'UP is completely neutral in terms of the organoleptic characteristics of the future wine.
Use during flotation: 10 to 20 g/hL to clarify and compact the mash cake.
In practice, the dosage corresponds to twice the amount of the adjuvant used: for a dosage of 5 g/hL of Qi UP XC (art. 69.592.01), use 10 g/hL of BENT'UP.
The dose can be increased if you want to act on deproteinisation.
