Gelatine GELA FLOTT is a special gelatine for the flotation of grape must. Its effect is based on its positive charge.
Gela Flott reacts with negatively charged must constituents (e.g. tannins) to form flocculating lees particles, which the flotation gas floats up
and which entrain other turbidities on their way to the must surface. To ensure optimum flotation success, the musts should be free of pectin.
Early enzymatisation of the must using Lallzym C-Max Art. 69.319 is recommended. For further product properties see data sheet.
