Highly active, pectolytic enzymes in liquid form for the effective clarification of pome fruit and pear juices.
Facilitates sedimentation and filtration.
Dosage / hl with the following parameters: temperature 45 - 55 °C, reaction time 1 - 2 hours
Apple 2 - 3 ml, pear 3 - 5 ml
A lower temperature level can be adjusted by the duration and/or the amount of enzyme.
e.g. at a temperature of 10°C and an enzyme dosage of 4-6 ml (apples) / hl or 6-10 ml (pears) / hl, clarification takes approx. 8-16 hours.
or at a temperature of 10°C and an enzyme dosage of 8-12 ml (apples) / hl or 12-20ml (pears) / hl, clarification takes approx. 4-8 hours.
