Potassium pyrosulphite (K2S2O5), also known as potassium metabisulphite, potassium disulphite (Kalfit) or E 224, is a readily soluble powder for sulphurising must, mash or young wine, for example.
1 sachet (10 g) = 5 g SO2 100 %
Adding this quantity to 100 litres of beverage increases the SO2 level by approx. 50 mg SO2/l.
Application:
1. to protect the mash or juice: add immediately to the juice or mash in the case of rotten fruit or berries
2. at the end of fermentation or after racking off the yeast
3. to protect against ageing before bottling.
4. as a sealing liquid in the fermenter: dissolve 10 g potassium pyrosulphite in 0.25 dl water and add approx. 3 g citric acid. This solution produces a 2 % sulphurous acid.
5. when bottling for rinsing bottles, hoses, equipment & for soaking bottle corks: use 1-2 % solution. Important: the addition of acid is necessary for aqueous preparations.
6. wet preservation of wooden barrels: dissolve 100 g of potassium pyrosulphite and 30 g of citric acid or lactic acid for every 100 litres of barrel space.
Important: always mix well. Store in a cool and dry place.
Danger
Causes serious eye damage.
May cause respiratory irritation.
Contact with acid liberates toxic gas.
Wear eye protection / face protection.
IF IN EYES: Rinse cautiously with water for several minutes, then continue rinsing.
