E224, food grade. Powder.
General information
This is pure potassium disulphite (potassium pyrosulphite, potassium metabisulphite, K2S2O5) in white, crystalline form. The odour is pungent sulphurous.
Fields of application
Used to sulphurise mash, must, wine or fruit wine. Acts as oxidation protection and prevents enzymatic browning. In addition to its antimicrobial activity, undesirable fermentation by-products (e.g. acetaldehyde) are also masked.
Do not add potassium disulphite to distillery mashes!
Dosage
can be added directly to the mash, must, wine or fruit wine.
Potassium disulphite decomposes and releases approx. 50 % of the amount of SO2 used, e.g. a dosage of 10 g/hl liquid results in an SO2 level of 50 mg/l. After dosing, mix thoroughly to avoid localised overconcentrations.
Mash: 5-15 g/hl Sprinkle onto crushed grapes or add in portions during crushing.
Must: 10 g/hl Add directly if mash has not been treated and grapes are at risk.
Young wine: 10-15 g/hl Dosage required for unsulphurised young wine made from healthy grapes. Dosage depends on pH value, unfavourable storage temperature, microbiological stability. The young wine is sulphurised immediately after the end of fermentation or after the first racking.
Wine/fruit wines:Check free SO2 content. A value of 30-50 mg/l provides microbiological safety.
Storage Store in a cool, dry place!
Must not get into the hands of children!
