FYNEO is a protein extract of yeast cells. The extracted proteins are highly concentrated and have a high molecular weight (> 15 KDa). These properties make the proteins an excellent clarifying agent.
FYNEO has a high capacity for clarification and allows rapid sedimentation.
Hard, bitter notes are reduced or eliminated and high-quality flavours are retained.
FYNEO is sold as granules.
5 to 15 g / hl for white wine (maximum legal dose: 30 g / hl) and
5 - 30 g / hl for red wine (maximum legal dose: 60 g / hl)
The maximum dose is 30 g / hl for white wine and 60 g / hl for red wine (regulation CE 606/2009)
