What is pH value?
The pH value is the concentration of free hydrogen ions in a liquid.
The pH value of pure water is 7. Liquids that have a greater concentration of hydrogen ions
of hydrogen ions than pure water are acidic and have a pH value of less than 7.
Conversely, liquids with a lower concentration of hydrogen ions are basic
hydrogen ions are basic and have a pH value above 7. The pH scale goes from 1 to 14.
Can I measure the pH value instead of the acidity of my must?
No! The acidity in winemaking is the number of grams of acid in your wine/juice,
usually expressed in grams of tartaric acid per litre. This can only be measured with blue liquor.
However, you can use a pH meter in combination with caustic soda:
Instead of adding blue lye until the colour changes to blue, add blue lye up to pH 7.00.
This method is much more accurate and much easier to read for red juices, for example!
