R2 produces fruity, intense and floral white wines thanks to the release of the corresponding precursors of varietal aromas. Recommended for aromatic white wine varieties such as Sauvignon blanc, Riesling and Gewürztraminer.
R2 was isolated by the South Australian Brian Croser in the Sauternes region (Bordeaux). Saccharomyces cerevisiae (var.bayanus. )
Well adapted to low temperatures can ferment down to 5°C (proven temperatures of 12-20°C).
