ProRum Finest is a blend of three yeast strains. The dry pure yeast is intended for the fermentation of molasses (by-product of sugar production).

The propagation of the pure yeasts takes place on sugar cane molasses, which is why Pro Rum is very well adapted to the substrate. The yeast mixture also combines fermentation power, sugar and alcohol tolerance with an appealing flavour development.
The yeast dosage should be based on the intended fermentation temperature:
20 g/hl at 25-35°C
30 g/hl at 20-25°C
40 g/hl at a minimum of 15-20°C.
The addition of 30 g DAP/hl (diammonium phosphate) Art. No. 69.193 facilitates fermentation and ensures complete fermentation.
